Amylase Used for the Production of Beer, Wine and yellow wine

INTRODUCTION:

Starch, a high polymeric carbohydrate is a mixture of two polysaccharide, such as amylose and amylopectin. Starch conversion enzyme can change the internal structure of starch, which will decrease the starch viscosity, thereby meeting the requirement in wine production.

SUKAMY-BR550 is an Amylum conversion enzyme derived from the submerged fermentation of Bacillus subtilis. It is widely used in the production of starch syrup, beer, yellow wine, glucose and gourmet powder and so on.

BENEFITS:

The benefits of using SUKAMY-BR550 for modifying original starch are easier operation technics, lower cost and no pollution.

This product can still have the indicated activity after three months storage under 25°C. In lower temperature, the activity of the product will last longer. This product should not be frozen.

CHRACTERISTICS:

1. SUKAMY-TX550 provides maximal benefit at pH range of 6.0 – 7.0 and at the temperature of 70 – 85°C and the optimum temperature is 75°C.
2. The product has an optimum pH of 6.0-6.4 and is deactivated at pH below 5.0.

SPECIFICATION:

SUKAMY-TX550 is available in liquid preparation as:

SUKAMy-BR550 (with enzyme activity of 1,500 U/ml)

SUKAMy-BR550x (with enzyme activity of 3,000 U/ml)

Unit definition: The amount of enzyme needed to hydrolyze 1 mg of starch in one minute at pH 6.0 at the reaction temperature of 60°C and the unit can be showed as u/ml.

CARRIED STANDARD:

This product follows the industry standard of PRC as QB1805.1-93.

APPLICATION AND DOSAGE:

Add SUKAMY-TX550 at the rate of 3-6 U/g together with calcium (Ca2+) at a concentration of 50-70ppm. The dosage should be decided through experiments according to the real objective conditions.

25 kg/plastic drum

Alternative packaging is available upon request for smaller or larger volumes.

STORAGE :

Store in a cool, dry place and away from direct sunlight.SUKAMY-TX550maintains its activity for considerably longer time when stored at lower temperatures (below 25°C). The product should not be frozen.

HANDLING PRECAUTIONS:

SUKAMY-BR550 is non-toxic and biodegradable. However, unnecessary contact with the product should be avoided. Long term exposure to protein based products such as SUKAMY-BR550 may sensitize certain individuals to the product. Wash hands with warm soapy water after handling. Keep out of reach of children.
